I also had to cut them in half to fit on the rib racks. Had to shut down the smoking to get to bed. Delicious - had a smoke ring but not melt in your mouth like I have had from others. More like the taste of smoked pork chops. Before foiling, I tasted some and they were delicious but were not very tender and tasted like ham. Cooked them at 240 avg for 3 hours until most of the bones were pulling back 1/2 inch. Smelled really garlicy before going on the WSM after 24 hrs in fridge. Just finished my first go with the Rufus Teague rub.
